Pimento Cheese Chicken Rollups Recipe
INGREDIENTS (Serves 4)
4 skinless, boneless chicken breasts
1 cup Italian dried bread crumbs
1/2 cup grated parmesean cheese
1/4 cup butter, melted
1 (7 oz.) container pimento cheese spread
DIRECTIONS
Step 1: Preheat oven to 350° F.
Step 2: With a mallet, pound out chicken breasts until thinned out (about an 1/4th of an inch thick).
Step 3: In a shallow dish or bowl mix together bread crumbs and parmesean cheese.
Step 4: Dip one side of each breast in the melted butter, then into the crumb/paresean cheese mixture. Place a dollop of pimento cheese on one end of the chicken breast (on the side not dipped in the breadcrumb/parmesean cheese mix).
Step 5: Roll up each breast and place in a lightly greased 9X13” baking dish, rolled end down or secure with a toothpick. Leave room between each rollup to bake. Drizzle any remaining butter over the checken rollups.
Step 6: Bake in preheated oven for 35 - 40 minutes or until cooked through and juices run clear. Turn the broiler on high and brown the top bread crumbs to golden brown.
