Easy Breakfast Stack
Got left over potatoes?
We’ve talked about repurposing food for other meals, right? When I boil red potatoes, I always boil a few extra and keep them in the refrigerator to use later. For a quick, easy breakfast, instead of using pre-packaged hash browns, I grab a couple of red potatoes out, smash them and brown them as a potato cake base for this dish.
Breakfast Stack Recipe
Ingredients
Boiled red potatoes
Sausage strips (or bacon)
Eggs
Cheese
Green onions
Directions
Step 1: Coarsely smash the cooked, red potatoes. Heat frying pan to medium high heat. Melt a pat of butter in the bottom of the pan and place potatoes in the hot pan forming a potato cake. Allow a crispy crust to form before flipping and frying the other side.
Step 2: While potatoes are frying, heat another skillet on medium and heat the sausage strips (or cook the bacon). Laurie’s Shopping Tip: I like to use these Johnsonville sausage strips because they are precooked and you basically just have to heat them through. Even though I LOVE bacon, it takes longer to cook and the grease spatter clean-up may be an issue when you’re in a hurry in the morning. You can choose to purchase precooked bacon, but I’m not a fan. Bacon is already cured with salt and they add even more salt in the packaging as a preservative.
Step 3: Once potatoes are fried and the sausage (or bacon) is almost done, cover potatoes with cheese and allow it to get all melty.
Step 4: Fry eggs to your liking, assemble your breakfast stack, garnish with green onion and serve.
