Easter Cake Bake Off Submissions
My friend Adam’s family did an Easter cake bakeoff competition over the years (pre-pandemic). Each year, members of the family would submit their Easter cake, put the cakes out on social media, and then tally the votes for the best cake. In 2019 I did the Easter bunny roses cake and in 2018 I did the Easter basket cake. No recipes on this blog entry because you can bake whatever flavor cake you like. I’m just giving you some decorating ideas!
Easter Bunny in a Field of Roses Cake
This cake was beautiful and I had a lot of fun making it, but it was quite labor intensive! I made the individual roses out of rolled fondant with a cut-out form I found on the internet. Each rose had 2-5 cut-outs depending on the size of the flower. You start by twisting the cut-out very tightly from the inside and layer additional cutouts, folding out the petal edges, to form the roses.
Once all roses were formed, I baked two layer cakes (one smaller than the other) and frosted them with a thin layer of vanilla frosting. I rolled out a very thin sheet of white fondant to cover the entire cake and molded it with my hands around the layers, pulling out any creases or air bubbles.
Once the cake was covered, I added the ribbon around each layer and then using thick frosting as “glue”, I placed all roses where I wanted them. Finally I bought a chocolate bunny for the top and hung a little rose petal out of his mouth.
Easter Basket Cake
This cake was MUCH easier than the first, but it turned out cute! I baked 2 round layer cakes and let them completely cool. While it was cooling, I took a bag of shredded coconut and put it in a baggie and added drops of green food coloring and shook it all up until it was the color I wanted for the “grass” and broke apart the Kit Kat bars. I frosted the cool cake with white icing, leaving it a little thicker on the sides to hold the Kit Kat pieces. Then I added the individual Kit Kat bars around the whole cake. Once that step was done, I wrapped Easter themed ribbon around the cake and sprinkled the coconut “grass” over the top. A few mini Cadbury eggs and a handle from an old Easter basket completed the look.
