Turkey Salad
Repurpose leftover turkey and serve on crackers as an appetizer or snack or make a whole sandwich for a light lunch.
Turkey Salad Recipe
Ingredients
¾ pound cooked turkey meat
2 stalks celery
2 green onions
3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard 1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt
Directions
Step 1: Chop your celery, onion and turkey.
Step 2: Mix all ingredients well, in a bowl.
Step 3: Place in a food processor and finely chop using the pulse setting. *Laurie’s Prep Tip: I do not have a large food processor, so I did mine in my smaller processor in a couple of batches.
Step 4: Transfer the turkey mixture to a medium bowl. Cover and refrigerate 8 hours, or overnight, before serving
