Strawberry Shortcakes
Ingredients
For Shortcakes:
4 1/2 cups Bisquick
1 cup 7-UP soda
1 cup sour cream
2 T. butter
Sugar for dusting
For Filling:
3 cups fresh strawberries
3-4 T. sugar
For Whipped Cream:
1 cup cold heavy cream
2 T. sugar
1 tsp. vanilla
Directions
Step 1: Preheat oven to 425°. Mix Bisquick, 7-Up and sour cream in a mixing bowl.
Step 2: Drop 1/3 c. biscuits onto buttered baking pan. Brush with butter and dust with sugar.
Step 3: Bake 12-14 minutes until light, golden brown. Transfer to a cooling rack to completely cool.
Step 4: To make the filling: Wash, hull and slice the strawberries. Lay out in a shallow bowl and cover with 3-4 T. of sugar. Cover and refrigerate to allow fruit to make its own syrup.
Step 5: To make the whipped cream: In a glass or metal bowl, mix the heavy cream, sugar and vanilla. Whip with an electric mixer on high until stiff peaks form.
Step 6: Cut the top off of a shortcake. On the bottom of the cake, layer whipped cream and strawberries. Place the top of the cake on top and layer more whipped cream and strawberries. Serve.
