Dessert Too Pretty To Eat!

Strawberry Cake Recipe

Ingredients

1 ¾ cups white sugar
1 cup unsalted butter, softened
5 large egg whites
2 cups pureed strawberries
½ cup sour cream
2 teaspoons strawberry extract
3 cups cake flour
1 tablespoon baking powder
1 teaspoon baking soda
¼ teaspoon salt

Directions

Step 1: Preheat the oven to 350 degrees. Grease and flour bundt cake pan.

Step 2: Beat sugar and butter together in a large bowl with an electric mixer on medium speed until fluffy. Add egg whites one at a time, beating well after each addition. Stir in pureed strawberries, sour cream, and strawberry extract.

Step 3: Sift cake flour, baking powder, baking soda, and salt together in a medium bowl. Add gradually to the butter mixture, beating until combined. Pour batter evenly into the prepared pan.

Step 4: Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool in the pan for 10 minutes before removing and cooling completely on wire rack, about 30 minutes more.

*Laurie’s Note: If you don’t have a bundt pan, you can do this in to 3, 9” cake pans and layer the frosting between each cake.

Strawberry Cream Cheese Frosting Recipe

Ingredients

1 (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
¼ cup strawberry soda
½ teaspoon strawberry extract
6 ½ cups confectioners' sugar
Fresh strawberries
Pink food coloring

Directions

Step 5: While cake cools, beat cream cheese and butter together in a large bowl with an electric mixer on medium speed until smooth. Add strawberry soda and strawberry extract. Gradually beat in confectioners' sugar until frosting is smooth. Add drops of food coloring until the desired color. *Laurie’s Note: I wanted this frosting to be extra thick to get that “draping” effect, so I added more confectioners' sugar until it was the consistency I liked.

Step 6: Frost by spooning the frosting over the cake, layering globs, and decorate the inside of the bundt and top with strawberries.
