Minute Steaks w/ Stewed Tomatoes
With meat prices as high as they are, you can still have a good, flavorful steak on a tight budget. I grew up in Iowa calling these “Minute Steaks”, but they’re also referred to as “cube steaks”, “hamburger steaks”, “Swiss steaks”, “round steaks”, etc. Basically, it is a cut of tenderized beef.
Minute Steak Recipe
Ingredients (Serves 2)
2 tenderized beef steaks
2 tablespoons Italian bread crumbs
1/4 teaspoon pepper
1 tablespoon butter
1 14-ounce can stewed tomatoes
2 tablespoons dried onion flakes
1 clove minced garlic
1 tablespoon Worcestershire sauce
Directions
Step 1: Combine bread crumbs and pepper. Sprinkle steak with half of mixture and pat into the steaks. (If you wish, you can pound it in with a mallet.). Flip steaks and repeat bread crumb process on the second side.
Step 2: In a deep skillet, melt butter. When hot, add steaks and brown on each side.
Step 3: Add tomatoes, onions, garlic and Worcestershire sauce and bring to a boil.
Step 4: Reduce heat, cover and simmer on low for 2 hours, occasionally, basting juices over the top of the steaks.
Step 5: Remove steaks and serve with stewed tomatoes.
