King Crab Legs, Bruschetta & Ceasar Salad
I’m a fan of all thing’s “crab”. King crab is an investment in a special meal, that’s for sure! If you prefer, you can do snow crab, Dungeness crab or even blue crab.
How to Steam King Crab Legs
Ingredients
Fresh or frozen king crab legs
1/2 c. water
Fresh lemons (sliced)
6 Tbsp. salted butter
1 tsp. chives
Directions
Step 1: Preheat oven to 400 degrees. Place crab legs on a foil-lined pan with lemon slices and add water to the bottom of the pan. Cover tightly with aluminum foil.
Step 2: Allow crab legs to steam in oven for 7 - 10 minutes.
Step 3: Meanwhile, in a small sauce pan, melt butter on low heat. When crab is steamed, add chives to butter and serve with crab legs.
Bruschetta Recipe
This bruschetta recipe can accompany a meal or be served as an appetizer. It’s one of my FAVORITE things!
Ingredients
6 Roma tomatoes (coarsely chopped)
4 Tbsp. fresh chopped basil
4 cloves crushed garlic
6 Tbsp. olive oil (divided)
Salt & pepper to taste
1 French bread baguette
Shredded parmesan cheese
Directions
Step 1: Mix chopped tomatoes, basil, garlic, 2 Tbsp. olive oil, salt and pepper together.
Step 2: Refrigerate for 1 hour to allow flavors to infuse.
Step 3: Slice baguette into 1/2” slices. Brush with olive oil.
Step 4: Heat broiler of oven to low and toast baguette slices 3” from the broiler element (30 seconds - 2 minutes depending on how hot your broiler gets). *Laurie’s Cooking Tip: Watch the toasting process very carefully - it happens fast and you don’t want to burn your bread!
Step 5: Assemble toasted baguette slices, tomato mixture and top with shredded or shaved parmesan cheese and serve.
*Laurie’s Leftover Tip: If you have leftover tomato mixture (which I never do) LOL, it’s great the next day tossed with some cooked, angel hair pasta. YUM!
*Laurie’s Shopping Tip: I usually purchase my fresh basil from the store, but this year I’m growing my own! It’s a lot of fun and I’m trying my hand at my own herb garden for a fraction of the cost!
Ceasar Salad Recipe
*Laurie’s Cooking Tip: Traditional Ceasar salad has anchovies. If you grew up like me, anchovies got a bad rap! LOL! But the saltiness of anchovy paste gives this dressing the BEST flavor. DON’T be scared … trust me!
Ingredients
1 head romaine lettuce (chopped)
1 c. mayo
1 Ranch dressing packet
2/3 c. whole milk
1 tsp. anchovy paste
Croutons
Shredded or shaved parmesan cheese
Directions
Step 1: Chop romaine lettuce.
Step 2: In a separate bowl, make the dressing by mixing mayo, ranch dressing mix, milk and anchovy paste and blend with an immersion or regular blender.
Step 3: Assemble salad with lettuce, Ceasar dressing, croutons and top with shredded parmesan cheese. Serve.
*Laurie’s Tip: I always recommend making your own Ceasar dressing, but if you don’t have time to make your own, you can purchase a good brand at the grocery store.
