Italian Shrimp Spiedino w/ Amogio Sauce
Italian cuisine isn’t just pasta! Spiedino is a very popular choice in many Italian restaurants. Spiedini is simply the Italian word for “skewers”. These fancy Italian meat kebobs (chicken, beef, shrimp, lamb) can be altered in any way that suits the family. The key difference, though, is that the main meat is breaded. Amogio sauce is a traditional Italian sauce and marinade for chicken, fish and pasta making it a perfect pair for this dish.
Italian Shrimp Spiedino
INGREDIENTS (serves 4)
20 pc shrimp, peeled and deveined
5 oz. Italian salad dressing
2 cups unseasoned breadcrumbs
6 -8 garlic cloves, finely minced
1 cup parsley, minced
1 cup freshly grated Romano cheese
INGREDIENTS for Amogia Sauce
4 oz. Italian salad dressing
1 lemon, juice of
Fresh mint, minced
DIRECTIONS
Step 1: Place shrimp in a re-sealable plastic bag set in a shallow dish. Pour 5 oz. salad dressing over shrimp. Seal bag; turn to coat shrimp. Marinate in the refrigerator for 2-3 hours.
Step 2: In a large mixing bowl, mix breadcrumbs with cheese, garlic and parsley.
Step 3: Remove shrimp from marinade, place in breadcrumbs mix and roll and then place 4-5 shrimp on each skewer.
Step 4: Place coated shrimp skewers in a well-oiled baking dish. Drizzle with a little amogio sauce.
Step 5: Place in a 400° preheated oven and bake for 12-15 minutes. Remove from oven and carefully tip pan upward on one end. Using a spoon take some amogio sauce and drizzle over shrimp.
Step 6: Serve on a platter and drizzle with leftover amogio sauce.
