Instant Pot Corned Beef for Ruben Sandwiches Recipe
Corned Beef Ingredients
3-4 lb. Corned Beef
1/4 c. Dried Onion Flakes
1 Tblsp. Garlic Powder
1 Tblsp. Dried Thyme
1 Tblsp. Blues Hog Chop & Truffle Mix
1 tsp. Onion Powder
1/2 c. Beef Broth
8 oz. Beer
Ruben Sandwich Ingredients
Rye Bread (or bread of your choice)
Saurkraut
Swiss Cheese
Thousand Island Dressing
Directions
Step 1: Remove corned beef from packaging, rinse off the brine and pat dry. Place on rack in the Instant Pot and season with garlic powder, thyme, Blues Hog Truffle & Chop seasoning, and onion powder. Pour broth and beer over the top of the corned beef. Seal the Instant Pot and using the “Pressure Cook” setting and allow to pressure cook for 2 hours. Allow the pressure to release for about 10 minutes and open the vent to allow the steam to release.
Step 2: Remove the corned beef and roughly chop or shred the meat to your preference.
Step 3: To make a Ruben sandwich, spread butter on bread and toast placing swiss cheese on the bottom piece of bread and set aside. Laurie’s Tip: You place some of the cheese on the bottom piece of bread to ensure the juices from the meat do not make your bread soggy.
Step 4: In the same hot pan, add meat, cover in sour kraut, and place swiss cheese on top. Add a little bit of the juice from the Instant Pot to the pan, cover and allow the steam to melt the cheese.
Step 5: Transfer to the bottom piece of toasted bread, smear with Thousand Island dressing. Top with 2nd piece of toasted bread, cut and serve.
Left over meat (if you have any) can be used in the morning to make corned beef hash.
