Grilled Steak, Roasted Garlic & Portobella Mushroom Pizza Recipe
Ingredients:
1 prepared pizza crust (or make your own)
1/2 lb. grilled steak (sliced)
2 bulbs (about 20 cloves), roasted garlic (more or less to taste)
4 portobello mushrooms (thinly sliced)
3 c. mozzarella
For the Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 ¼ cups milk
1 T. Italian seasoning
¼ teaspoon salt
¼ teaspoon pepper
¼ cup Parmesan cheese
Directions for the Garlic:
Step 1: Preheat your oven to 400°F.
Step 2: Peel and discard the loose, papery outer layers of the whole garlic bulb, leaving intact the skins of the individual cloves of garlic. Using a sharp knife, cut 1/4 to a 1/2 inch from the top of cloves, exposing the individual cloves of garlic.
Step 3: Put garlic in a small cake pan or foil “bowl”, placing the garlic heads, cut side up. (*Laurie’s Tip: I have a terra cotta garlic roaster, but a muffin pan works great for this, as it keeps the garlic bulbs from rolling around.) Drizzle with a couple teaspoons of olive oil over each exposed head, using your fingers to rub the olive oil over all the cut, exposed garlic cloves.
Step 4: Cover the bulbs with aluminum foil or lid and bake at 400°F for 40 minutes. After 40 minutes, remove the lid or foil and bake another 20 minutes until the cloves are lightly browned and feel soft when pressed.
Step 5: Cool and remove roasted garlic cloves from their skins. Allow the garlic to cool enough so you can touch it without burning yourself. Use a small knife to cut the skin slightly around each clove. Use a cocktail fork or your fingers to pull or squeeze the roasted garlic cloves out of their skins.
For the Sauce:
Step 6: Melt the butter in a small pot over medium heat. Once the butter is melted, add the flour, and whisk for 1 minute until blended. Add the milk to the pot slowly, and stir for about 8 minutes, until the mixture has thickened. Once thickened, stir in the Italian seasoning, salt and pepper. Stir until blended and add cheese. Continue to stir until cheese is melted and sauce is smooth.
Assembling Pizza:
Step 7: Spead prepared pizza crust out onto a greased pan and prebake dough at 400 degrees for 6-8 minutes.
Step 8: Slather pizza crust with sauce and top with steak, roasted garlic and mozzarella. Bake for 10-15 minutes until crust & cheese is golden.
