Crockpot French Onion Soup Recipe

This recipe cooks overnight. So, the night before you want soup, slice your onions, put them in the crockpot and go about your evening. In the morning, add the liquid ingredients and go to work. Soup will be ready when you get home! Super easy!!

Ingredients

1 1/2 lbs. Yellow onions
1 T. Butter
1 T. Olive oil
1 tsp. Salt
1/2 tsp. Pepper
1/8 c. Balsamic vinegar
4 c. Beef broth
Provolone cheese
Baguettes

Directions

Step 1: Thinly slice your onions.

Step 2: Put onions, butter, oil, salt and pepper in the crock pot the night before. Cook on low over night (10-12 hours) until onions are brown and soft.

Step 3: The next morning, add vinegar and broth to crock pot and cook on low for another 6-8 hours.

Step 4: Ladle soup into oven-safe bowls, float baguette on top and cover with slices of provolone. Put bowls on a cookie sheet and broil 3" from broiler element until browned and bubbly.

*Laurie’s Meal Idea: I paired this yummy soup with a simple club sandwich. It’s an easy, quick meal when you have people coming and going on different schedules around your house. You can make up sandwiches and store them in baggies in the fridge and the soup can stay hot in the crockpot for whenever family members get home and are hungry!
