Crispy Garlic Chicken Recipe
INGREDIENTS (Serves 3-4)
1 Tbsp olive oil
6-8 chicken thighs and/or legs, combined - salt and pepper , to taste
1 Tbsp unsalted butter
1 small onion , chopped
2 cloves garlic , minced
2 carrots, cut in large pieces (or 1 c. baby carrots)
1 c. sliced button mushrooms
3-4 sprigs thyme, (leaves only)
2 Tbsp all-purpose flour
1/2 cup dry white wine
1 1/2 cup chicken stock
1/2 cup heavy cream
DIRECTIONS
Step 1: Pat chicken dry with paper towels. Sprinkle both sides of chicken with garlic powder, salt and pepper.
Step 2: Heat oil in a large skillet over medium heat. Place chicken in skillet (if using thighs, smooth side down).
Step 3: Cook chicken legs turning to ensure all sides around browned about 3-4 minutes per side. Lift legs and hold to pan to brown on all sides. (If using thighs, press down lightly with spatula. Cook for 5 minutes until deep golden and crispy. Turn and press lightly with spatula. Cook for 2 minutes.)
Step 4: Add butter and garlic, cook for 1 minute until garlic is light golden.
Step 5: Add wine, broth or water, then turn up heat. Stir around the chicken to dissolve golden bits stuck on the skillet into the wine. Simmer rapidly for 5 -7 minutes until sauce starts to reduce and becomes thicker. Cook until internal temperature of the chicken is at least 165 degrees
Step 6: Remove from heat. Spoon sauce over the chicken and sprinkle with parsley to serve.
