Cream Puffs
Cream Puff Recipe
Ingredients
1 cup water
1 cup flour
1 tablespoon Crisco
Pinch salt
3 eggs
Directions
Step 1: Bring water, Crisco and salt to boil in a small pot. Remove from heat. Add flour. Mix thoroughly. Add eggs, one at a time. Mixture will separate after adding each egg but do not worry, it will form back together.
Step 2: Drop a large tablespoon of batter onto a prepared baking sheet. Bake shells at 400 degrees for 25 to 35 minutes or until puffed and golden brown. *Laurie’s Baking Tip: It is important that the puffs are golden/crisp or they may collapse.
Step 3: Remove from oven and cool completely and fill with pastry cream.
Cream Puff Pastry Cream Recipe
Ingredients
2 cups whipping heavy whipping cream
2 tablespoons confectioner’s sugar
3.4 ounces instant vanilla pudding (1 small box)
1 c. baking chips (your chosen flavor – I used milk chocolate)
3 tablespoons heavy whipping cream
Directions
Step 1: Start whipping the whipping cream with electric mixer on high.
Step 2: As it starts to thicken, add in the confectioner’s sugar and powdered, instant vanilla pudding and continue mixing on high until smooth and creamy and stiff peaks form.
Step 3: You may either cut the puffs in half and spoon in the pastry cream, or fill a piping bag with cream and inject it into the puffs.
Step 4: In a microwave or double-boiler, melt the chips and cream together. *Laurie’s Tip: Do not scorch your chocolate! If melting in microwave, heat 10 – 20 seconds at a time and stir between each heating. Drizzle each puff with topping and refrigerate.
Optional Topping: If you’re not a fan of chocolate, you may simply dust filled puffs with additional confectioner’s sugar.
