Bacon Wrapped Shrimp-Stuffed Crab Cakes
This can be an appetizer or a whole meal!
I’ve featured my crab cake recipe in a past blog, but to elevate that recipe into something new, I offer this. Everything is better with bacon, right?!
Bacon Wrapped Shrimp-Stuffed Crab Cakes
Ingredients
1 lb. large, steamed shrimp
1 lb. uncooked bacon
Recipe for crab cake mix:
16 ounces crabmeat
1 cup plain bread crumbs
1 tablespoon Dijon mustard
1/2 tablespoon hot sauce
1/2 tablespoon Cajun seasoning
2 small (or 1 large) eggs
1/2 red onion, minced
1/8 teaspoon red pepper flakes
Directions
Step 1: Flake the crabmeat into a large bowl and add the bread crumbs, mustard, hot sauce, Cajun seasoning, eggs and onion. Fold ingredients well but don't overwork - you want to preserve the integrity of the crab lumps.
Step 2: Take individual shrimp and wrap 2 Tbsps. of crab cake mix around them.
Step 3: Once shrimp are enclosed in crab cake mix, wrap in a half slice of bacon. Repeat until all shrimp are wrapped.
Step 4: Place all wrapped shrimp on a rack over a shallow baking sheet. Bake at 375 degrees until bacon is to desired crispness (about 15-20 minutes).
Step 5: Serve alone or with cocktail sauce.
